Makati Shangri-La Manila has opened Shido, a new Japanese restaurant that brings together multiple styles of Japanese dining while highlighting the country’s culinary traditions and culture.

Named after a Japanese term meaning “starting in motion,” Shido is built around the idea of presenting Japanese cuisine and hospitality through seasonal menus and varied dining experiences while remaining rooted in tradition.

The restaurant features several dining concepts under one roof, including a sushi counter, robatayaki, teppanyaki, a Japanese bar and a main dining area. Each space offers a different approach to Japanese cuisine and hospitality.

Leading the restaurant is Executive Japanese Chef Daisuke Nishimura, whose career has taken him to Hong Kong, Bali and Thailand. According to Makati Shangri-La Manila, those experiences have shaped his culinary approach, combining traditional Japanese craftsmanship with influences gained from working across Asia. His menus are designed to evolve with the seasons while staying true to Japanese culinary traditions.

“Manila’s dining scene continues to evolve, with guests increasingly seeking experiences that go beyond the meal itself,” said Jonathan Reynolds, general manager of Makati Shangri-La Manila. “Shido was created as a place where guests can experience Japan through its cuisine, culture and hospitality. For us, Japan in Motion is about creating new reasons to discover and rediscover Japan with every visit.”

Beyond its food offerings, the restaurant is also intended to serve as a venue for cultural exchange through guest chef collaborations, seasonal showcases and future chef residencies, introducing diners to different aspects of Japanese culture.

Makati Shangri-La Manila said the concept aims to bring together dining, cultural experiences and community in a setting that reflects both traditional and evolving expressions of Japanese hospitality.
